NOSE
Black currant and cherry dominate the nose with hints of peppermint fragrances.
PALATE
Ripe and full-bodied flavors of dark fruits, cherry, and blackcurrants dominate the palate with a dry, upfront tannin structure.
FOOD MATCH
The classic pairing with Cabernet Sauvignon is lamb, but for something a little different match our RLB Cabernet Sauvignon with a big bowl of rich, dark, slow cooked rabbit, with wild rice.
WINEMAKER COMMENTS
The site has a North facing aspect with rich red volcanic soils. Harvested in the cool of the night, destemmed, crushed into open concrete fermenters. Primary fermentation was for 10 days followed by a further 5 days post-ferment maturation on skins before being pressed off.
